- 5-7 pounds baby back or spare ribs shopping list
- salt shopping list
- pepper shopping list
- garlic powder shopping list
- Sweet Baby Ray's Original BBQ sauce or your favorite shopping list
- 60 charcoal briquettes (Kingsford if you can get them.) shopping list
- 4 large chunks hickory wood , soaked in water for one hour. shopping list
- Need some quilted BBQ mitts so you don't burn your hands (seriously!) shopping list
How to make it
- Sprinkle salt, black pepper and garlic powder liberally on both sides of ribs.
- Light 60 charcoal briquettes in the center of a 221/2" Weber Kettle Grill (I have six grills and this is the only one that does this well.)
- Let coals burn until about 2/3 white.
- Spread coals evenly on the fire grate.
- Add the four chunks of soaked hickory to coals (here and there)
- Brown ribs for approximately 15-25 minutes, turning as needed to keep from burning, until nicely browned
- Immediately, double wrap ribs in heavy duty aluminum foil, sealing all edges well (so no juice escapes!)
- Cook for one hour with the lid on the grill and vents open, turning about every 15 minutes.
- After one hour of turning, remove ribs from foil (discard foil) and cook ribs with the lid on turning every 15 minutes, as coals die, for about one hour.
- The last half hour, mop with Sweet Baby Ray's or other BBQ sauce as fire dies.
- Hallalujah, you've just made the best! (So I'm told.)

ok. I know this is good. He cooked it for a woman who was 92 years old last week and SHE said it was the best she ever had. Me too. He's doing it again tomorrow and I will take a picture.
