Ingredients

How to make it

  • Beat eggs, soy sauce, salt, sugar and pepper. Stir in bean sprouts,1/2c green onions, celery, onion, water chestnuts and meat or shrimp or both.
  • Heat oil in lg.skillet over med heat till hot. Pour vegetable-egg mix by half -cupfuls into hot oil forming patties. As eggs begin to set, fold up edges with spoon so patties are uniformly thick. Cook till light brown about 3 mins a side. Remove from pan and keep warm.
  • Sauce: heat water, soy sauce inst. chicken broth powderand sugar and then add mixture of cornstarch and water to thicken.
  • Spoon hot sauce over patties and sprinkle with sliced green onion.. Serve with chrisp chinese noodles or steamed rice.
  • I do not use the sauce,I prefer pork or chicken gravy. If I have homemade leftover,I use that. If not,I use prepared and doctor it.
