How to make it

  • For the scallops:
  • Prepare 12 skewers; if wooden, soak in hot water for 20 minutes. Skewer the scallops and the mint alternately.
  • Brush the skewered scallops with half of the sesame dressing.
  • Set the other half aside.
  • Light grill or broiler.
  • Place scallop skewers on the grill or broiler pan.
  • Grill or broil lightly for about 2 minutes per side.
  • Remove from heat and drizzle the remaining dressing over the scallops; sprinkle with sesame seeds.
  • For the dressing:
  • In a small bowl, whisk together the sesame oil, vegetable oil, shallot, lemon zest, lemon juice and soy sauce.
  • Whisk in the hot water and set aside to combine the flavours.

    I cooked the scallops on the stove top in a medium-hot saute pan, with a touch of the marinating liquid. I didn't have any shallots, so used some minced onion in the dressing. Also, no mint, so I snipped cilantro over the bowl when it was all finished.
