Grilled Sesame Scallops

- 1 1/2 pounds fresh large scallops, side muscle removed (if very large, cut in half) shopping list
- 36 small fresh mint leaves shopping list
- 1 recipe Sesame lemon Dressing (recipe follows) shopping list
- 1/4 cup toasted sesame seeds shopping list
- Sesame-lemon Dressing shopping list
- 3 tablespoons sesame oil shopping list
- 2 tablespoons vegetable oil shopping list
- 2 tablespoons minced shallot shopping list
- 1 teaspoon grated lemon zest shopping list
- 1 tablespoon lemon juice shopping list
- 1 tablespoon soy sauce shopping list
- 1 tablespoon hot water shopping list
How to make it
- For the scallops:
- Prepare 12 skewers; if wooden, soak in hot water for 20 minutes. Skewer the scallops and the mint alternately.
- Brush the skewered scallops with half of the sesame dressing.
- Set the other half aside.
- Light grill or broiler.
- Place scallop skewers on the grill or broiler pan.
- Grill or broil lightly for about 2 minutes per side.
- Remove from heat and drizzle the remaining dressing over the scallops; sprinkle with sesame seeds.
- For the dressing:
- In a small bowl, whisk together the sesame oil, vegetable oil, shallot, lemon zest, lemon juice and soy sauce.
- Whisk in the hot water and set aside to combine the flavours.
