Overnight Breakfast Or Brunch Casserole Recipe
This is a Southern brunch favorite that can also be used for a family breakfast. Recipe can be multipled tofeed a crowd. Church breakfasts often feature this easy to serve dish.

Ingredients
  • 14 - 15 slices stale bread.
  • 3 cups cooked and crumbled sausage, or diced ham, or crumbled bacon, or a combo.
  • 3/4 lb shredded cheddar, divided
  • 10 eggs, beaten
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 3 cups milk
  • 1tsp salt
  • 1/2 tsp black pepper
  • pinch of white pepper
  • 4 dashes Louisiana Hot Sauce
  • 1/2 stick butter

Directions
  1. Melt butter into 9 x 13 casserole dish, set aside
  2. Cook bacon, or sausage, remove and set aise, reserve small amount of grease
  3. Saute onion and bell pepper in small amount of grease, remove and set aside
  4. Mix eggs, milk, salt, peppers, hot sauce and beat until well blended.
  5. Add meat of your choice, stir in.
  6. Add wilted veggies, stir in
  7. Add 1?2 lb shredded cheese, fold in
  8. cut or tear bread into small cubes and place in bottom of buttered casserole.
  9. Pour egg, meat, veggie mixture over and top with remaining shredded cheese.
  10. Bake uncovered approximately 1 hour at 350, or until eggs are firmly set.
  11. NOTE: For a more colorful dish, use pimentos or red bell peppers in addition to green bells. A small jar of pimentos or 1/2 a red bell, works well.

This recipe is great for a crowd. It can be made with Egg Beaters for those with cholesterol concerns. And for a crowd you can purchase pasteurized liquid eggs in cartons as an added measure of food safety. 1/4 cup equals a large egg. Egg amount is approximate. Use enough to cover all ingedients. Serve with biscuits, garlic cheese grits, a fruit cup and smack yo' lips, momma, 'cause you are going to get some big, big compliments.


I make one just like this every Christmas, just like my Mom always has. My recipe calls for dry mustard and 2 cups of shredded cheddar cheese, but the rest is basically the same. While we're opening presents the casserole is cooking a way and by the time we're done so is breakfast! Then we follow it up(later on) with the fruit salad recipe I have posted. Then we're too full for anything else, but we still cook like we're feeding an Army!


Ever freeze this or use it by the day as a microwave breakfast for work roady?


Cokemn: yes to both. We are empty nesters and do this for breakfast often. Make ahead, take a serving and nuke. Works great. Just don't overnuke. Freezing also works.


Think this could be fixed in a Crockpot somehow? I would love to have a recipe for this for slow cooker cooking!


Do you think this can be made without the bread? I'd like to fix this for company this weekend, and one of my quest cannot eat starches without breaking out in hives...
