Mushroom Pizza On The Bbq

- Fresh pizza dough, rolled out into a medium sized, thin crust shopping list
- olive oil shopping list
- Sherried onion marmalade (see AuntyBea's recipe onion-marmalade.html">Sherried onion marmalade) shopping list
- 1 lb or so of mixed mushrooms- I used bluefoot & chanterelles, cleaned & roughly chopped shopping list
- 1 T butter shopping list
- 1 T olive oil shopping list
- 1/4 c brandy shopping list
- Several sprigs of thyme shopping list
- Small wedge of brie, cut into chunks shopping list
- Small piece of fresh mozzarella, torn into pieces shopping list
- A little freshly grated parmesan shopping list
- A little fresh parsley, chopped shopping list
- salt & pepper shopping list
How to make it
- Melt butter over medium heat, then add olive oil and increase heat.
- Add mushrooms and saute until they release their moisture.
- Add thyme & toss to coat.
- Add brandy and flambe. Lower heat and simmer until mostly dry. Remove thyme sprigs.Remove from heat.
- Light one side of your gas grill. If using charcoal, keep all coals to one side. We'll be using indirect heat for most of the cooking. (we're looking for a medium flame btw)
- Brush your crust liberally with olive oil and plop it right onto the hot side of your (hopefully clean) grill.
- Close the lid, and cook for about 2 minutes.
- Check the crust- you should have nice grill marks, and some browning. If so, brush the top with oil and flip.
- Cook an additional minute or two, until you have light grill marks. Crust should be pretty much cooked at this point.
- Take the crust off the grill, and spoon some onion marmalade (from AuntyBea's recipe) onto the crispiest side. Spread as you would pizza sauce.
- Top with mushrooms, brie and mozzarella.
- Return pizza to the BBQ, but on the cool side. (this is very important- there shouldn't be any flame or heat directly under the pizza- we're using the BBQ like a convection oven)
- Close the lid and cook until the cheese is all nice and melty, maybe 5 minutes.
- Garnish with a little parmesan if you like and some fresh parsley. Enjoy!
- **Variation: if you don't have a BBQ, you could do this directly on the rack in your oven. But if your oven is as gross as mine is, you probably don't want to. Instead, go out and buy yourself a pizza stone. Use it, love it, cherish it. Seriously, you want one. You won't get the nice smokyness that the BBQ imparts, but hey- you'll have some freakishly good pizza, I promise.

Oh my goodness, Holly! I LOVE my pizza grilled and this just looks heavenly! Sooooo gourmet! I am so glad you like the onion marmy! If you don't mind I'm going to send it to Shine, he is a fan of grilled pizza too!
