My mom's cousin Kay sent this to me when I sent out an APB for Pecan Pie to my relatives. This was judged "Best Over-all" at Fort Bend County Wide Texas Pecan Show, twice!

Ingredients
  • 1 10-inch deep dish pie crust
  • 5 eggs
  • 3 Tbs melted butter
  • 1/2 cup white sugar (again, I use castor sugar)
  • 1 1/4 cup white corn syrup
  • 1 tsp vanilla
  • 1/4 tsp salt (optional)
  • 3 Tbs flour
  • 2 cups pecan halves

Directions
  1. Beat eggs lightly
  2. Add butter, sugar, syrup vanilla flour and pecans
  3. Pour into pie shell.
  4. Bake at 350 for 40 minutes or until center is soft, but not quite set. It will set as it cools.

Oh Kay!! Great recipe ... can't wait until we get some pecans! We get them in the small town where I work. Several people have pecan trees growing in their yards. Better ask them before picking them up....don't wanna get shot!
