How to make it

  • Preheat oven to 425 degrees F.
  • Put the grease or shortening in a well seasoned 9" cast iron skillet and put it in the oven till sizzling.
  • Combine the dry ingredients. Add beaten eggs one at a time to the dry ingredients. Slowly pour your buttermilk into the mixture. It should have a pancake batter like consistency. Not to thin, but not to thick either.
  • Take the hot skillet and sprinkle about 1 tbsp of cornmeal on the bottom. I don't know why my Maw Maw does this so I do it too.
  • Pour the batter into the hot skillet.
  • Put back in the oven and bake for 20 to 25 minutes until nice and brown on top. I usually check with a knife to make sure it is done all the way through.

Good recipe. I make cornbread very often, and I always sprinkle the cornmeal in the hot greased skillet. It gives the bottom a very crisp crust. Wonderful!!
