I got this from "More With Less", one of my brother's text books from the HEART Project (a third world missionary training center) At Warner Southern College in Lake Wales, Florida.

Ingredients
  • 3 Tbs butter
  • 1 c onion - chopped
  • 1 clove garlic - mashed
  • 1 lb ground beef
  • 1Tbs curry powder
  • 1 1/2 tsp salt
  • dash each: pepper, cinnamon, ginger and turmeric
  • 1 160z can cooked tomatoes
  • 2 potatoes - diced
  • 2c frozen peas or green beans (or 1 cup each)
  • Prepared Rice for 6

Directions
  1. Saute butter, onion and garlic in a skillet.
  2. Add ground beef. Brown well.
  3. Stir in curry, salt, pepper, cinnamon, ginger, turmeric, tomatoes, potatoes, and peas or beans.
  4. Cover and simmer 25 minutes.
  5. Serve with rice.

A friend gave me this exact same recipe about 8 years ago! We love it and it's so easy! I used frozen cubed hash brown and frozen peas - so I almost always have the ingredients on hand. I also use 1/2 t each cinnamon, ginger and turmeric.j It's easy to throw into the slow cooker too after browning the meat.
