Eggplant& tomato gravy is easy to prepare.This is done in Andhra style,Spicy too..Goes with rice,biriyani...i tried this for the first time.

Ingredients
  • Big Eggplant 1-sliced
  • Tomatoes 2-chopped
  • Red chilli 2
  • Green chilli 2
  • GingerGarlic paste 1/2 tsp
  • Curry leaf
  • Oninon 1 chopped
  • Turmeric powder 1/2 tsp
  • Coriender powder 1 tsp
  • Chilly powder 1 tsp
  • Cumin seeds 1/2 tsp
  • Mustard seed 1 tsp

Directions
  1. Fry the sliced Eggplant in oil,drain it and keep it aside
  2. In a pan,add some oil,add red chilli,mustard seeds,cumin seeds,chopped onions,green chillies,ginger garlic paste
  3. cook till the onions becomes soft
  4. Add Tomatoes and cook for few sec
  5. Add to it turmeric powder,coriender powder,chilly powder
  6. Cook for 5 min in low flame,u can add water if needed
  7. Then,add the fried eggplant ,mix it well,cook for 2-3 min

This sounds abit diff frm the one I do . I omit the step one and After step 6 , I add the eggplant and simmer until cooked and Now , I can't wait to try ur version . Thx alot gal : 0 )


I have eggplants growing in our garden so I will try this recipe. Sounds very good!
