Tomato Basil Soup Recipe

Ingredients

4 tomatoes, peeled, seeded, and diced

4 cups of tomato juice

14 fresh basil leaves

1 cup of heavy whipping cream

1/2 cups butter

salt to taste

ground black pepper to taste

Directions

1. combine tomatoes and juice in a stockpot and simmer for 30 minutes

2. puree the tomatoes and the juice with the basil leaves in a blender in batches

3. return the mixture to the stockpot, add the cream and the butter and heat through. add the salt and pepper to taste

4. serve hot
