How to make it

  • Cream butter and sugar together in mixer bowl (or about 100 strokes if doing by hand with a whisk).
  • Add in eggs, one at a time, whisking/beating well after each addition. Add lemon juice. In another bowl, combine lemon rind, flour, mace and salt. Pour in butter-egg mixture and continue to stir until well-combined.
  • Using a small ice cream scoop drop scoopfulls of the dough (about 1 1/2 teaspoons) onto lightly greased baking sheet.
  • Bake at 350 degrees F for 10-12 minutes or until lightly golden and bottom is lightly browned.
  • Remove from oven, cool for 3 minutes on rack then transfer with spatula onto cooling racks.
  • When cool, store in airtight container for up to 3 days.
