Lemony Wafers

- 1/2 cup butter or margarine, softened to room temperature shopping list
- 1 1/3 cups sugar shopping list
- 3 eggs shopping list
- 3 tbsp lemon juice shopping list
- Grated rind of 1 lemon shopping list
- 2 cups unsifted flour shopping list
- 1/4 tsp mace shopping list
- 1/4 tsp salt shopping list
How to make it
- Cream butter and sugar together in mixer bowl (or about 100 strokes if doing by hand with a whisk).
- Add in eggs, one at a time, whisking/beating well after each addition. Add lemon juice. In another bowl, combine lemon rind, flour, mace and salt. Pour in butter-egg mixture and continue to stir until well-combined.
- Using a small ice cream scoop drop scoopfulls of the dough (about 1 1/2 teaspoons) onto lightly greased baking sheet.
- Bake at 350 degrees F for 10-12 minutes or until lightly golden and bottom is lightly browned.
- Remove from oven, cool for 3 minutes on rack then transfer with spatula onto cooling racks.
- When cool, store in airtight container for up to 3 days.
