Ingredients
  • 1/4 cup granulated sugar
  • 1 tbsp. flour
  • 1 egg (I don't usually put this in because I worry about raw egg)
  • 1/2 cup pineapple juice
  • 1/4 tsp. salt
  • 2 apples, peeled and diced
  • 1/2 cup celery finely chopped
  • 1/2 cup chopped walnuts (I use pecans 'cause my mother-in-law doesn't like walnuts!)
  • 1 cup whipping cream

Directions
  1. In small saucepan mix together sugar and flour. Add egg. Stir until moistenedj. Stir in pineapple juice and salt. Cook and stir over medium heat until it boils and thickens. Remove from heat. Cool. This step may be made faster by setting the saucepan in cold water. Stir often. Add apples, celery and nuts to cooled mixture. Whip cream until stiff. Fold into apple mixture. Pour into freezer molds, cups or tube. Cover to store.
