grilled creole zucchini sandwiches

grilled zucchini is great served with any grilled meat or as a filling to a delightful hot sandwich. simple to make, just throw some buns on the grill at the end if you want to make a great veggie burtger!
Ingredients
- 10 medium zucchini, split lengthwise shopping list
- olive oil shopping list
- creole seasoning shopping list
- 6 split buns shopping list
How to make it
- place split zucchinin into baking dish, sprinkle with olive oil, roll squash around so as to cover well with oil
- sprinkle generously with creole seasoning.
- grill over hot coals about 7 minutes each side, handle with tongs as fork will break zucchini
- lightly grill split buns if making sandwiches, good served with horesradish mayo and a cold beer.
