How to make it

  • Mx biscuit crumbs and melted butter together and press into a 9 inch spring form cake tin . This is not baked.
  • Beat cream cheese until smooth, add lemon juice, condensed milk and beat well, pour into tin with crust, chill very well until firm, at least several hours or overnight.
  • Before serving:
  • Beat egg whites until soft peaks form, gradually add sugar beating well between each addition,
  • Spoon the stiff meringue mixture onto the cheesecake right to the edges,
  • Bake or broil in oven until merigue is golden about 5 to 7 baked or 2 to 3 minutes under broiler , carefully not to burn meringue
