Lemon Meringue Cheesecake

- 1 1/4 cups sweet cookie crumbs or graham cracker crumbs shopping list
- 1/2 cup melted butter shopping list
- Filling shopping list
- 2, 8 oz pkg cream cheese softened shopping list
- 1/2 cup lemon juice shopping list
- 1 can sweetened condensed milk ( not evaporated ) shopping list
- Mergingue shopping list
- 4 egg whites shopping list
- 1/2 cup sugar shopping list
How to make it
- Mx biscuit crumbs and melted butter together and press into a 9 inch spring form cake tin . This is not baked.
- Beat cream cheese until smooth, add lemon juice, condensed milk and beat well, pour into tin with crust, chill very well until firm, at least several hours or overnight.
- Before serving:
- Beat egg whites until soft peaks form, gradually add sugar beating well between each addition,
- Spoon the stiff meringue mixture onto the cheesecake right to the edges,
- Bake or broil in oven until merigue is golden about 5 to 7 baked or 2 to 3 minutes under broiler , carefully not to burn meringue
