Savory Chicken In Peanut Butter Sauce Recipe
This is a great way to prepare chicken. It's excellent taken to pot luck dinners and family gatherings.

Ingredients
  • 4 chicken breasts, boneless, skinless and cut into cubes
  • 1-1/2 Tbsp. olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1-2 celery ribs, chopped
  • 1-2 cloves garlic, minced
  • 1/4 cup creamy peanut butter
  • 1/2 cup chicken stock
  • 1/4 cup honey
  • 1 Tablespoon curry powder
  • A pinch of cumin
  • salt to taste
  • A dash hot pepper sauce such as Tobasco

Directions
  1. Combine onion, green pepper, celery and garlic in a frying pan with olive oil. Saute until veggies are soft. Do not brown.
  2. In a bowl, mix together peanut butter, chicken stock, honey, curry powder, cumin and hot pepper sauce.
  3. Add chunks of chicken and coat well.
  4. Cook until chicken is completely cooked on medium low heat.
  5. Serve over egg noodles or rice.
