Ingredients

How to make it

  • Preheat oven to 350 degrees f
  • Place potatoes, onions and carrots evenly in a 9x14 baking dish.
  • Add salt and pepper to taste
  • Pour 1 cup of salad dressing over the vegetables.
  • Stir to coat evenly.
  • Place chicken on top of vegetables.
  • Add salt and pepper to taste.
  • Pour remaining salad dressing on top of the chicken.
  • Cover dish with tin foil.
  • Bake for 1 hour.
  • Remove foil and bake for another 30 minutes

    My mom and dad used to make something similar to this and called it Campfire Chicken. Their's was wrapped in individual pouches of tin foil and they also included fresh green beans and maybe mushrooms! It was fabulous!

    My nephews loved this..one said the potatoes are 'fire' which means really good. :)
    Next time I try this I will drain off the sauce and remove the chicken and try to brown the potatoes a bit more in the oven. Plus I didn't have any carrots on hand so I used yellow peppers. Yumm
