Easy 1 Pan Chicken Dinner

- 6 medium potatoes sliced shopping list
- 4-6 carrots sliced shopping list
- 1 medium onion sliced shopping list
- (you can add other vegetables too, or substitute) shopping list
- 6 chicken breasts, or 12 chicken thighs shopping list
- salt shopping list
- pepper shopping list
- 2 cups of vinaigrette type Italian Salad Dressing- any type i.e. calorie wise, fat free, zesty but not creamy shopping list
- If you really like Italian salad dressing, and/or lots of sauce, use more dressing. shopping list
How to make it
- Preheat oven to 350 degrees f
- Place potatoes, onions and carrots evenly in a 9x14 baking dish.
- Add salt and pepper to taste
- Pour 1 cup of salad dressing over the vegetables.
- Stir to coat evenly.
- Place chicken on top of vegetables.
- Add salt and pepper to taste.
- Pour remaining salad dressing on top of the chicken.
- Cover dish with tin foil.
- Bake for 1 hour.
- Remove foil and bake for another 30 minutes

My nephews loved this..one said the potatoes are 'fire' which means really good. :)
Next time I try this I will drain off the sauce and remove the chicken and try to brown the potatoes a bit more in the oven. Plus I didn't have any carrots on ha...moremrtnzangel8 in SW loved it -
My boys LOVED this and had two helpings! Great way to have them eat veggies!
