Ingredients
  • 1 LB UNSALTED BUTTER, softened or room temperature
  • 1 LB CREAM CHEESE, softened or room temperature
  • 4 - 5 C SIFTED ALL PURPOSE FLOUR
  • Powdered (Confectioners) Sugar as needed for dusting the work area.

Directions
  1. Preheat oven to 400.
  2. Mix butter and cream cheese with hands. When thoroughly mixed, add flour and continue mixing with hands.
  3. Let stand in refrigerator until chilled.
  4. Roll out on powdered sugar surface and cut into 2 in. squares and spread about 1 teaspoon of pastry filling (poppy seed, apricot, date, almond, cheese etc.) in middle. Bring together opposite corners in the middle and pinch together.
  5. If dough begins to get to room temperature, put dough back in refrigerator.
  6. Bake for about 10 minute or until light brown. It may not take 10 minutes to bake. This is just my guesstimate. I usually just keep an eye on them so that they don’t burn.

Absolutely love kolachy!!! I can never keep them in the house - gone in minutes. I love the ones with apricot, poppyseed, and the ones with the walnut filling from nut rolls. YUM!
