Cool Cucumber Sauce Recipe

Ingredients
- 2 Cups Minced Cucumbers,seeds removed
- 2 teaspoons salt
- 2Cups Sour Cream
- 1 Cup Mayonnaise
- 1 Tablespoon Lemon Juice
- 1/4 Cup minced onion
- 1/4 Cup chopped Fresh Dill
- 1 teaspoon Sugar
- 1/4 Cup chopped Fresh Parsley
- Salt and White Pepper
Directions
- Place the cucumbers in a large bowl,add the salt and blend well.
- Place in a sieve to drain for 20 minutes.
- Then press the cucumbers against the sieve to squeeze out the excess moisture.
- Place the sour cream into a mixing bowl.
- Stir in the mayonnaise.
- Then the lemon juice.
- Add the remaining ingredients and mix well.
- Stir in the cucumbers.
- Adjust the seasonings to taste(add more lemon juice if desired)
- Serve with fish,smoked meats or vegetables.
