Hoisin Chicken Wraps Recipe

Ingredients

1Tbs veg oil

2 garlic cloves,finely chopped

1(1") piece of fresh ginger,peeled and finely chopped

3 scallions,white and lt. green parts,finely chopped

31/2 cups shreaded meat from 1 skinned rotisserie chicken

1/4c bottled hoisin sauce

1tsp rice vinegar

1/2c cahews,chopped

4 lg. flour tortillas

12 lg. lettuce leaves,shreaded

2 carrots,shreaded

Directions

Warm oil in lg. skillet over medium heat. Add garlic,ginger and scallions and stir till fragrant,about 1 min. Add chicken,hoisin sauce,vinegar and cashews and cook,stirring until heated through,2-3 mins

Warm tortillas in microwave just to soften. Lay tortillas on a work surface. Divide lettuce among tortilla. Spoon chicken mixture into middle of each tortilla ,sprinkle with carrots,wrap and serve.

I love hoisin, and in fact just bought a new bottle yesterday - Kikkomann's my fave type available at the stores, though I usually ask for extra when I ever go Chinese for that oh my factor, its the real deal.
