Homemade Italian Sausage Spaghetti Sauce Recipe
I posted my summer sauce here yesterday....so here's my regular sauce. Nice, thick and tomato-y with lots of good deep rich flavor. Nice and thick, too, to really cling to the pasta.

Ingredients
  • 1 pound Italian pork sausage links, Hot style
  • 1 pound Italian pork sausage link, sweet style
  • 1 tablespoon olive oil
  • 1 pound onions, chopped
  • 2 green peppers, chopped
  • 1/2 pound mushrooms, sliced
  • 4 large cloves garlic, minced
  • 2 18 ounce cans tomato paste
  • 2 24 ounce cans tomato sauce
  • 1 28 ounce can tomatoes, do not drain
  • 1/4 cup coffee powder, instant
  • 1 tablespoon thyme
  • 3 tablespoons basil
  • 2 tablespoons oregano
  • 1 teaspoon red pepper flakes
  • salt and pepper, to taste
  • 36 ounces red wine (2 tomato paste cans full - stir well to get all the paste left in the cans)
  • 2 bay leaves

Directions
  1. In largest dutch oven you have, saute sausage (removed from casing, breaking up with potato masher) until browned. Remove from pan, pour off grease. Saute veggies in olive oil, add the rest of the ingredients.
  2. Cook slowly for several hours, stirring frequently.
  3. Freeze what you don't use in quart containers.

Great post will have a lot left over to freeze never heard of instant coffee in this kind of sauce. Got my 5'er on this one.

Why do you add the coffee powder? Now I am not a coffee drinker do you taste the coffee?
