How to make it

  • In large saute pan with sides (chicken fry pan works well) add oil or ghee and put on high
  • add rice and stir every minute or so until it starts to show some colour (about 10 mts)
  • add 1 cup of the wine and stir until absorbed
  • add the rest of the ingredients except the butter
  • keep on high, covered
  • when you hear the change that means the liquid is absorbed (about 15-20 mts)
  • check to see if rice is "al dente" just slightly firm.
  • If not then add about another 1/2 cup and let absorb.
  • When done to al dente turn off heat, add butter and stir in
  • cover and let stand 10 mts
  • the butter and standing allow the stronger wine flavours to mellow a bit.
  • If you feel a bit skittish about using so much wine just try it with less and make up the diff with water.

    didn't want to create a risotto, just to get the wine flavour into the rice. Although you've given me an idea for a recipe tweak. :-)

    there you go.. another way to cook rice, very creative. kinda like you were going to make risotto but changed your mind half way thru. i like it!

    Sounds delicious! I don't like plain rice but I can eat it all doctored up,lol. My family loves rice, anyway it is cooked!
