This is from my Grandma's sister. It sounds like a recipe she got from the resturant she worked at. Mom said she would also put these up at the end of the season.

Ingredients
  • 12 cups fresh uncooked corn cut from cob (do not scrape cob)
  • 1 cup sugar
  • 1/2 cup salt
  • milk

Directions
  1. Put cut corn in a large pot
  2. Add sugar and salt, cover with water and boil for 20 minutes.
  3. pour off brine water, and cover with cool water and let sit on the back of the stove for a little while.
  4. When ready to serve, pour off water and a little milk
  5. This is really a lot of corn, it just calls for canning! So, put in quart jars and process in a hot bath for canning. I would leave out the milk until you are ready to heat up for dinner. (Thanks Henrie!)

I am speechless (rare for me). What a waste of fresh corn.

This sounds like the Southern way of making sweet corn....YUMMY!!!!!!!!!!!!!!

I am not into controversy, but being a nurse, and being from Middle Tennessee, I feel like I should apologize for the comments made from another Tennessean portraying the role of a nurse... I love corn, and I love your recipe! You definitely get a high five from me! Teresa
