Crispy Topped Cod

- 4 large pieces of cod or other white fish of your choice, each piece cut into half (cut by width, not length) shopping list
- 1 can mushroom soup, undiluted shopping list
- 8 oz crushed potato chips, any flavor of your choice shopping list
- *2 oz diced pointed red sweet peper for an additional flavor topping shopping list
- lemon siices shopping list
How to make it
- Preheat oven to 400F/200C/Gas Mark 6.
- Grease a large rectangular glass casserole dish.
- Place fish evenly in dish.
- Top fish with mushroom soup. Do not dilute.
- Spread crushed potato chips over top of fish/soup.
- Sprinkle diced pepper over top.
- Bake for 30 min.
- Decorate with thin lemon slices.
- Serve with a green salad and crusty bread.
- *I have also made this with reduced-fat soup and crushed corn flakes to keep the fat content down. Check the corn flakes for the sugar and fat content, though.
