How to make it
- Remove any fat from the veal steaks, pound steaks out thinly. Peel and finely chop onion; slice the mushrooms thinly.
- Melt butter in shallow pan, add veal steaks while butter is foaming. Cook veal quicklyl 3 to 4 minutes, turning once, remove from pan, add chopped onion, cook 1 to 2 minutes, then pour in sherry.
- Bring sherry to a boil, boil uncovered 15 seconds, then stir in flour, mix well. Remove from heat, stir in water and crumbled stock cube. Return to heat, stir until sauce comes to a boil.
- Return steaks to pan, add mushrooms, mix well. Season sauce with salt and pepper. Cover pan, simmer very gently 8 minutes then stir in cream, stir until heated through. Serves 4
