How to make it

  • Remove any fat from the veal steaks, pound steaks out thinly. Peel and finely chop onion; slice the mushrooms thinly.
  • Melt butter in shallow pan, add veal steaks while butter is foaming. Cook veal quicklyl 3 to 4 minutes, turning once, remove from pan, add chopped onion, cook 1 to 2 minutes, then pour in sherry.
  • Bring sherry to a boil, boil uncovered 15 seconds, then stir in flour, mix well. Remove from heat, stir in water and crumbled stock cube. Return to heat, stir until sauce comes to a boil.
  • Return steaks to pan, add mushrooms, mix well. Season sauce with salt and pepper. Cover pan, simmer very gently 8 minutes then stir in cream, stir until heated through. Serves 4

    I can't eat Veal so I would have to sub chicken or stak, would that be ok or would it mess up the recipe?

    I think you can make veal dishes like this pretty well with chicken but veal has such a good flavor and this looks like a great recipe for it.

    I've actually never had veal. (I know, and at my age!) You could probably make this with any other steak. Huh? Sounds good!
