Pecan Waffles Recipe

Ingredients

2 cups sifted cake flour

2 teaspoons baking powder

1/2 teaspoon salt

2 egg yolks

1 1/4 cups milk

6 tablespoons oil

2 egg whites

1/2 cup chopped pecans

Directions

Preheat waffle iron.

Shift flour with baking powder and salt; set aside.

In medium bowl, beat egg yolk, milk, and oil until well combined with mixer.

Gradually add flour mixture, alittle at a time, beating after each addition; beat only until smooth.

In a small bowl beat egg whites until stiff peaks; gently fold into batter just until combined.

Stir in pecans.

About 1/2 cup of mixture makes one big waffle.
