How to make it

  • Using a sharp knife, make a horizontal slit in each chicken breast, do not cut all the way through, just deep enough to create a pocket in the flesh.
  • stuff the tanpenade, sun-dried tomatoes, and garlic slivers into the pocket and close it up.
  • lay the chicken breasts on top of the rosemary sprigs in a roasting pan and drizzle with olive oil.
  • season with a little salt and pepper and cook in a preheated oven 350 degrees f. for about 18 minutes until chicken is cooked through.
  • when chicken is cool enough to handle, cut into slices.
  • arrange the meat on the wholegrain bread roll bases, sprinkle with the pecorino cheese shavings, and top with the lids.
  • toast in a sandwich grill for 3 to 4 minutes until the bread is golden and the chicken is hot.
  • serve immediately...........

    This sounds so delicious. I love that the chicken breasts are stuffed and roasted - that woudld make the slices so pretty when you put them in the sandwich. Lovely flavors, too! I'll have to print this one and try it - my panini press is horribly under-used. Thanks for sharing! - Natalie
