Roasted Rosemary Chicken Panini

- 2 - chicken breasts shopping list
- 2 -teaspoons tapenade shopping list
- 4 -sundried tomatoes shopping list
- 1 garlic clove , cut i nto slivers shopping list
- 2 tablespoons olive oil shopping list
- 2 large whole grain rolls cut in half horizontally shopping list
- 2 ounce of pecorino cheese shopping list
- salt and pepper to taste shopping list
How to make it
- Using a sharp knife, make a horizontal slit in each chicken breast, do not cut all the way through, just deep enough to create a pocket in the flesh.
- stuff the tanpenade, sun-dried tomatoes, and garlic slivers into the pocket and close it up.
- lay the chicken breasts on top of the rosemary sprigs in a roasting pan and drizzle with olive oil.
- season with a little salt and pepper and cook in a preheated oven 350 degrees f. for about 18 minutes until chicken is cooked through.
- when chicken is cool enough to handle, cut into slices.
- arrange the meat on the wholegrain bread roll bases, sprinkle with the pecorino cheese shavings, and top with the lids.
- toast in a sandwich grill for 3 to 4 minutes until the bread is golden and the chicken is hot.
- serve immediately...........
