My Kinda Fajita

- 1 eggplant, cut lengthwise into 1/4-inch thick slices shopping list
- 1 zucchini, cut lengthwise into 1/4-inch thick slices shopping list
- 1 red pepper, cut into wedges shopping list
- 1 bunch scallions shopping list
- 8-6 in. flour tortillas shopping list
- 2 cups pepper jack cheese, shredded shopping list
- seasoned butter shopping list
- 1/2 stick butter shopping list
- 2 tbls. cilantro, chopped shopping list
- 1 tsp. chili powder shopping list
- 1 tsp. salt shopping list
- 1/4 tsp. ground red pepper shopping list
- 2 tbls. lime juice, fresh shopping list
- salsa and sour cream to garnish shopping list
How to make it
- Seasoned butter
- Melt butter in small saucepan
- Add cilantro, chili powder, salt and ground red pepper
- Cook over low heat 2 minutes
- Stir in lime juice
- Remove from heat.
- Brush rack of grill with oil
- Heat grill to medium heat
- Cook veggies until crisp-tender, about 3 minutes
- Turn and brush with Seasoned butter
- Cook another 2 minutes or so.
- On cutting board, slice veggies to bite size pieces
- Set aside in large bowl
- Add remaining butter and toss to coat
- Heat flour tortillas in microwave according to package directions
- Put 3/4 cup vegetables and 1/4 cup pepper jack cheese down the center of each tortilla
- Fold flour tortillas toward center
- Place back on grill to melt cheese
