How to make it

  • Combine the sugar, corn syrup and butter in a heavy saucepan and heat just enough for the butter to melt and the sugar to dissolve.
  • Cool.
  • Beat in eggs, add vanilla and salt if desired.
  • Spread pecans over bottom of unbaked pie shell.
  • Pour filling over them.
  • Bake at 375 degrees for about 10 minutes, then turn temperature down to 325 degrees and baking for another 35 - 40 minutes -
  • Watch closely, you might need to cover the outside edges with aluminum foil if they're browning too quickly.
