Beef Enceritos Recipe

Ingredients

Filling:

1 Cup of taco meat (from my other recipe)

1 Can of refried Beans

1 Can of Chopped green chilis (I use Ortega)

1 Small onion chopped

Other Ingredients needed:

Soft Flour taco shells

2 cans La Preferida Sauce, Green Chile Enchilada (you can use another brand, but this one if you can get it is the best).

2 Cups of Cheddar cheese

Directions

Mix filling ingredients together

Spread some of the mixture on one side of the tortilla shell and roll over till the end

Cut off empty ends of shell and place in a larger baking dish in a close row, but not touching.

You probably will not use all the mixture but you might.

Top rolled shells with green sauce, then 1/2 the cheese and then more green sauce.

Bake at 300 1/2 way through and top with remaining cheese.

Bake for a total of 1 hour but keep your eye on it so you don't burn them.
