Ingredients

2 squash and zucchini, cut in half and cut julienne style (large cuts)

1 bell pepper, sliced

1 cup fresh asparagus, cut in 1 inch pieces

1 large portebella mushroon, sliced

3 Tbs. olive oil

1 cup cherry tomatoes, quartered

1 package penne or rotini pasta, cooked al dente, completely cooled

3/4 cup green onions

1 cup fresh grated parmesan cheese

Dressing:

1 tsp. dry mustard

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. sugar

1 tsp. dried oregano

1 tsp. dried parsley (or 1/4 cup fresh)

2 garlic cloves, pressed

5 Tsp. lemon juice

6 Tsp. balsamic vinegar

1/2 cup extra-virgin olive oil

Directions

Cup up vegetables, season with salt, pepper, and a dash of garlic powder. Coat in bowl with 3 Tsp. of olive oil. Grill in a grilling basket (or one of your choice) until done...not too soft, but cooked. Remove and let cool.

Mix the cooked and cooled pasta with green onions and cherry tomatoes. Add a little salt and pepper. Then add dressing. Add the grilled vegetables to the pasta and top with parmesan cheese (amount to your taste). Mix well.
