Carols Lovely Carrot Cake Recipe
I got this one from my friend Carol Lovely, and it's "lovely". This is my second favorite Carrot Cake. I like the addition of coconut.

Ingredients
  • 2 1/4 c unsifted flour
  • 1 1/2 cup sugar
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup veg. oil
  • 3 eggs
  • 1/2 cup milk
  • 2 cups shreaded carrots
  • 1/2 cup coconut flaked
  • 3/4 cup chopped nuts
  • 1/2 cup currants

Directions
  1. Grease/oil/spray and flour 13x9 cake pan
  2. Mix dry ingredients in a large bowl
  3. Add oil, eggs, milk & carrots.
  4. Beat at low speed until moistened, scraping sides of bowl. Then beat at med speed 2. min.
  5. Stir in remaining ingredients.
  6. Bake 55 to 60 minutes or until toothpick comes out clean. Cool and frost.
  7. Frosting:
  8. Cream together: 3 oz. Cream Cheese, softened; 2 Tbs butter, softened; 2 Tbs milk; 1/4 tsp vanilla; dash of salt; Add 2 - 2 1/4 c confectioners sugar to desired consistancy.

I love carrot cake and your recipe looks great. Unfortunately,I have to omit the coconut because of allergies but other than that, it's a "5" fork winner!
