Got this from daisybrand.com and had to share. Made it and its wonderful. Can't eat it all the time if your watching your waistline but good to have on a special occasion.

Ingredients
  • 15 oz can artichoke bottoms
  • 1/2 pound cooked shrimp
  • 1/2 pound sliced mushrooms
  • 1/2 cup butter
  • 3/4 cup cream
  • 1 cup milk
  • 1/4 cup sherry
  • 1 tsp. worcestershire sauce
  • 1 dash salt & pepper
  • 1/2 cup flour
  • 1 cup sour cream
  • 3/4 cup grated parmesan cheese
  • 1/4 tsp paprika

Directions
  1. Chop drained artichokes & arrange in the bottom of a 8x8 casserole dish. Pour cooked shrimp over artichokes. Saute mushrooms in 2 tablespoons butter. Stir mushrooms into shrimp/artichoke mixture. Mix cream, milk, sherry, Worc. sauce, salt & pepper. Set aside. Melt remaining butter, stir in flour and cook until a light roux forms on medium heat. Turn heat to low, whisk milk mixture into roux. Whisk until sauce thickens. Remove from heat, stir in sour cream. Pour sauce over shrimp mixture. Cover with cheese and sprinkle with paprika. Bake at 350 for 25 minutes.

Love those ingredients -- it takes 1/2 lb shrimp and feeds 6 people? Shoot, that can't be beat - especially for such a luscious main ingredient like SHRIMPS!! ;)

This sounds excellent. I'm having people over this weekend and been scouting out good appetizer/munchies recipes. :) Definitely will be trying this one out. THanks for much for posting!

By the way, do you think I could substitute anything for the sherry? I don't normally have sherry on hand and don't want to buy a bottle just for this one recipe. (i wouldn't use it for anything else, so it'd inevitably go to waste) I was thinking maybe a mirin or a white wine might work...? What do you think?
