Cider and Brats

                    - •1 lb. (about 8) sweet Italian sausage, or beer brats shopping list
 - •l lb. yellow onions, peeled and cut in rough chunks shopping list
 - •1 tsp. prepared Dijon mustard shopping list
 - •a pinch of thyme shopping list
 - •1 cup apple cider shopping list
 - •salt and pepper shopping list
 - •1 large apple -cored, not peeled shopping list
 - •1 tbsp cornstarch (optional) shopping list
 
How to make it 
                    - lightly brown sausage in a medium sized cast iron skillet for about 5 minutes, turning often.
 - Pack the onions in around the sausages.
 - Stir in the mustard, thyme and apple juice.
 - Cover and simmer (do not boil) over medium low heat for about 30 minutes.
 - Thicken gravy with cornstarch, if necessary.
 - Season to taste with salt and fresh ground black pepper.
 - Divide apple into 8 to 10 slices and arrange over the top of the dish.
 - Cover and simmer for another 5 minutes.
 - Serve over mashed potatoes.
