How to make it

  • Parboil potatoes 20 mins. in salted water, drain.
  • Cut potatoes crosswise into eight 1-in. thick slices.
  • Cut onion crosswise into four 1-in. thick slices.
  • Alternately thread 2 potato slices and an onion slice, through skin of vegetables, on each of 4 8-in. skewers.
  • ________________________
  • Combine rest of ingredients to make seasoned butter
  • Brush butter mixture on both sides of vegetables
  • Broil over medium coals, or heat, for about 20 minutes, turning after about 10 mins. and brushing with seasoned butter occasionally.

    I love the flavors that are part of this. I do potatoes and onions in foil packets on the grill as I am not fond of skewering. Will try this,thanks!
