Crusty Honey Mustard Chicken Recipe

This is one of my family's favorite chicken dishes. Very moist and the honey gives it just a hint of sweetness.

Ingredients
- 1/4 C. honey
- 2 Tbs. prepared mustard
- 1 Tbs. mayo
- 1/2 C. saltine Cracker crumbs
- 1 tsp. salt
- 1/8 tsp. pepper
- 4 boneless, skinless chicken breast halves
Directions
- Preheat oven to 400 °.
- Lightly coat baking sheet with cooking spray.
- Combine honey,mustard,mayo,salt and pepper in small bowl, set aside 2 Tbs. for sauce.
- Spread crumbs in shallow dish.
- Dip chicken first in honey/mustard, then in crumbs to coat.
- Place on baking sheet.
- Bake for 20-25 minutes or until cooked through.
- Drizzle with reserved sauce.
