Cold Soba Noodle Toasted Nori And Spinach Soup

- 8 oz. dried soba noodles shopping list
- 1 1/2 cup hot dashi stock shopping list
- 1/4 cup soy shopping list
- 2 tbsp mirin shopping list
- 2 tbsp sugar shopping list
- 2 tbsp wasabi paste shopping list
- 2 sheets dried nori seaweed (toasted and cut rough chiffonade) shopping list
- 1 tsp toasted sesame seeds shopping list
- 1 bunch fresh spinach (stemmed, washed and cut rough chiffonade) shopping list
How to make it
- Bring a large saucepan of water to a boil, add the noodles, return to a boil, then add a cup of cold water. Return to a boil again, then add another cup of old water. Return to a boil for a third time, then drain, refresh and chill.
- Bring the next four ingredients to a simmer in a sauce pot until sugar is dissolved. Remove from heat, then divide between four soup bowls.
- Divide soba noodles among bowls, top with spinach and nori. Serve with sesame seeds and wasabi.
