How to make it

  • Bring a large saucepan of water to a boil, add the noodles, return to a boil, then add a cup of cold water. Return to a boil again, then add another cup of old water. Return to a boil for a third time, then drain, refresh and chill.
  • Bring the next four ingredients to a simmer in a sauce pot until sugar is dissolved. Remove from heat, then divide between four soup bowls.
  • Divide soba noodles among bowls, top with spinach and nori. Serve with sesame seeds and wasabi.

    Kombu, bonito flakes, soba noodles and nori can usually be found in most specialty stores like Whole Foods Market.

    Looks delish...I will need help from my friend who lived in Japan for awhile to help me find these ingredients, or suitable subs. Can't wait to try this
