This is from a Japanese recipe for soba noodles . I threw in the spinach. I had this with the teriyaki tofu recipe I posted previously sliced thinly on top and it was a seriously satisfying almost vegetarian soup.

Kombu, bonito flakes, soba noodles and nori can usually be found in most specialty stores like Whole Foods Market.

In Western and Eastern Canada we have a large Asian Supermarket chain called T&T Supermarket.
