Chile Verde

- 3-4 pounds of cubed pork shopping list
- 1 large onion diced shopping list
- 4 cloves chopped garlic shopping list
- 1/4 cup vegetable oil shopping list
- 1 tbsp salt shopping list
- 2 tbsp ground cumin shopping list
- 5 poblano or pasillo peppers shopping list
- 1 yellow bell pepper shopping list
- 2.5 pounds of tomatillos shopping list
- 1/2 bunch of cilantro shopping list
- 40 oz low sodium chicken broth shopping list
- 2 jalapenos shopping list
How to make it
- Heat oil in pan and cook onions and garlic until soft. Season with Cumin and salt.
- Remove onions and garlic from pan and add pork to sear.
- Add onions and garlic back to pan
- Add enough chicken broth to totally cover the meat and onions
- In a food processor finely chop the peppers and add to the pot
- Puree tomatillos and cilantro and add to the pot
- Simmer for 3 hours- the longer it cooks the better it gets!
