Carrot Cake

- 2 cups flour shopping list
- 2 cups sugar shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons baking soda shopping list
- 11/2 teaspoons cinnamon shopping list
- 1/4 teaspoon nutmeg shopping list
- 11/2 cups vegetable oil shopping list
- 4 eggs shopping list
- 3 cups shredded carrots shopping list
- 1 cup chopped pecans shopping list
How to make it
- Grease and flour 2 9" round cake pans
- Mix dry ingredients in large mixing bowl
- Add oil and eggs, mixing well by hand
- Stir in carrots and nuts
- Spread in prepared pans
- Bake at 350 35-45 minutes
- Cool completely before frosting with cream cheese frosting
- Cream Cheese Frosting:
- mix 8 oz softened cream cheese with a one pound box of powdered sugar and 1 teaspoon vanilla until smooth
