How to make it

  • Grease and flour 2 9" round cake pans
  • Mix dry ingredients in large mixing bowl
  • Add oil and eggs, mixing well by hand
  • Stir in carrots and nuts
  • Spread in prepared pans
  • Bake at 350 35-45 minutes
  • Cool completely before frosting with cream cheese frosting
  • Cream Cheese Frosting:
  • mix 8 oz softened cream cheese with a one pound box of powdered sugar and 1 teaspoon vanilla until smooth
