Carrot Cake Recipe
This is the recipe that made me love carrot cake(and my grandchildren!)

Ingredients
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 11/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 11/2 cups vegetable oil
  • 4 eggs
  • 3 cups shredded carrots
  • 1 cup chopped pecans

Directions
  1. Grease and flour 2 9" round cake pans
  2. Mix dry ingredients in large mixing bowl
  3. Add oil and eggs, mixing well by hand
  4. Stir in carrots and nuts
  5. Spread in prepared pans
  6. Bake at 350 35-45 minutes
  7. Cool completely before frosting with cream cheese frosting
  8. Cream Cheese Frosting:
  9. mix 8 oz softened cream cheese with a one pound box of powdered sugar and 1 teaspoon vanilla until smooth
