Ingredients
  • 2 tablespoons unsalted butter
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red pepper
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh thyme
  • 1 tablespoon Cajun Seasoning
  • 1/2 teaspoon hot sauce
  • 1 6 oz. can tomato paste
  • 1 8 oz can tomato sauce
  • 1 14 oz can diced tomatoes, drained
  • 1 cup ketchup
  • 2 cups chicken broth
  • 1 lemon, sliced
  • 2 bay leaves
  • 2 pounds peeled medium shrimp
  • 1/4 cup minced green onions
  • 1/4 cup minced fresh parsley
  • 8 cups prepared rice - see recipe as to when to prepare

Directions
  1. In a large saucepan, melt the butter over medium heat.
  2. Add onion, celery, green and red peppers and cook for 2 minutes.
  3. Stir in garlic, thyme, Creole seasoning and hot sauce. Cook for additional minute.
  4. Add tomato paste, tomato sauce, diced tomatoes and ketchup and stir well.
  5. Add teh chicken broth, lemon slices and bay leaves and stir to combine.
  6. Bring to simmer and cook for 30 minutes.
  7. While the tomato mixture is cooking, prepare eight cups of rice according to package directions. Set aside.
  8. Add shrimp to tomato mixture simmer for 10 minutes; do not overcook shrimp.
  9. Stir in green onions and parsley.
  10. remove the bay leaves.
  11. Put rice in serving dish with sides and ladle shrimp mixture on top.
