Shrimp Creole

- 2 tablespoons unsalted butter shopping list
- 1 cup chopped onions shopping list
- 1/2 cup chopped celery shopping list
- 1/2 cup chopped green bell pepper shopping list
- 1/2 cup chopped red pepper shopping list
- 1 tablespoon minced garlic shopping list
- 1 tablespoon minced fresh thyme shopping list
- 1 tablespoon cajun seasoning shopping list
- 1/2 teaspoon hot sauce shopping list
- 1 6 oz. can tomato paste shopping list
- 1 8 oz can tomato sauce shopping list
- 1 14 oz can diced tomatoes, drained shopping list
- 1 cup ketchup shopping list
- 2 cups chicken broth shopping list
- 1 lemon, sliced shopping list
- 2 bay leaves shopping list
- 2 pounds peeled medium shrimp shopping list
- 1/4 cup minced green onions shopping list
- 1/4 cup minced fresh parsley shopping list
- 8 cups prepared rice - see recipe as to when to prepare shopping list
How to make it
- In a large saucepan, melt the butter over medium heat.
- Add onion, celery, green and red peppers and cook for 2 minutes.
- Stir in garlic, thyme, Creole seasoning and hot sauce. Cook for additional minute.
- Add tomato paste, tomato sauce, diced tomatoes and ketchup and stir well.
- Add teh chicken broth, lemon slices and bay leaves and stir to combine.
- Bring to simmer and cook for 30 minutes.
- While the tomato mixture is cooking, prepare eight cups of rice according to package directions. Set aside.
- Add shrimp to tomato mixture simmer for 10 minutes; do not overcook shrimp.
- Stir in green onions and parsley.
- remove the bay leaves.
- Put rice in serving dish with sides and ladle shrimp mixture on top.
