This is a kid-friendly recipe. My son John loves to help me prepare this. He is a picky eater but he gobbles it up. He found the basic recipe on a site called meninaprons. Wait til he sees it on here!

Ingredients
  • 1 lb. ground sirloin (lean-ish)
  • 0.5 lb. ground pork (not sausage)
  • 1/2 cup minced shallots
  • 1 clove garlic, minced
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • Breadcrumbs equal to 4 slices bread (or crumbled wheat checks)
  • 2 TBSP dijon mustard
  • 1 Tsp. Liquid smoke
  • 1/2 Tsp. each of dried thyme, dried basil, cumin, black pepper, salt, and margoram

Directions
  1. Preheat oven to 350 degrees. Mix all ingredients in a large bowl. Mix well. Pack mixture into an ungreased loaf pan. Bake uncovered for 1 hour to 1 hour 15 minutes or until internal temperature is 160 degrees.
  2. Remove from oven and immediately drain grease or siphon off with a turkey baster. Let sit for 5-10 minutes before slicing and serving.

I bought a package of meat loaf blend yesterday at the grocery store. It already has the veal, beef and pork mixed so I think I'll try your recipe using this. I don't personally like meatloaf but am trying to learn to and keep making it using different recipes with the hope of coming up with one I'll really like. Don't worry, my leftovers aren't thrown away, they go to my food testers to enjoy.
