I made this for lunch/dinner, the kids love it, one of the ways to make them eat lots of vegetables!

Ingredients
  • 3 - 4 gloves Garlic - chopped finely
  • 2cm of ginger - chopped finely
  • 1/2 cabbage - finely cut in julien style
  • 2 carrots - finely cut in julien style
  • 300g runner/french beans - finely cut in julien style
  • vermicelli - 30g - soaked in water till soft
  • 10 chinese mushrooms, soaked for 1/2 hour before slice it finely
  • 300g chicken meat - finely diced (optional)
  • sesame oil - 2 tbsp
  • oyster sauce - 2tbsp
  • light soya sauce - 2 tbsp
  • salt & pepper for taste
  • 2 tbsp of cooking oil for stirfry
  • springroll sheets

Directions
  1. Heat the pan, add some oil.
  2. Fry the garlic & ginger for 1-2 minutes.
  3. Add in the chicken, fry until brown.
  4. Stir in the light soya sauce, oyster sauce and sesame oil.
  5. Add in the mushrooms, cook for another 2 minutes.
  6. Add in the vegetables one by one.
  7. Continue cooking until the vegetables are cooked (or half cooked - depending on your taste).
  8. Add the vermicelli, salt, pepper and mix well.
  9. Remove from heat.
  10. When cool, wrap the filling in the springroll sheets.
  11. It can be served immediately or you can deep fry it before serving with sweet chilli sauce.
  12. Yum!

This recipe is a keeper Your method for the vermicelli is unique and I love the filling.
I make Spring rolls a little different try them.
