Springrolls

- 3 - 4 gloves garlic - chopped finely shopping list
- 2cm of ginger - chopped finely shopping list
- 1/2 cabbage - finely cut in julien style shopping list
- 2 carrots - finely cut in julien style shopping list
- 300g runner/French beans - finely cut in julien style shopping list
- vermicelli - 30g - soaked in water till soft shopping list
- 10 chinese mushrooms, soaked for 1/2 hour before slice it finely shopping list
- 300g chicken meat - finely diced (optional) shopping list
- sesame oil - 2 tbsp shopping list
- oyster sauce - 2tbsp shopping list
- light soya sauce - 2 tbsp shopping list
- salt & pepper for taste shopping list
- 2 tbsp of cooking oil for stirfry shopping list
- springroll sheets shopping list
How to make it
- Heat the pan, add some oil.
- Fry the garlic & ginger for 1-2 minutes.
- Add in the chicken, fry until brown.
- Stir in the light soya sauce, oyster sauce and sesame oil.
- Add in the mushrooms, cook for another 2 minutes.
- Add in the vegetables one by one.
- Continue cooking until the vegetables are cooked (or half cooked - depending on your taste).
- Add the vermicelli, salt, pepper and mix well.
- Remove from heat.
- When cool, wrap the filling in the springroll sheets.
- It can be served immediately or you can deep fry it before serving with sweet chilli sauce.
- Yum!

This recipe is a keeper Your method for the vermicelli is unique and I love the filling.
