I loveeee Sea Scallops. This recipe came out of a magazine that I had. I tried it and it is so delicious!

Ingredients
  • 1/2 lb. whole-wheat bowtie pasta
  • 1 lb. sea scallops
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. olive oil
  • 1/4 cup jarred basil pesto or any pesto
  • 1/4 cup parmesan cheese, shredded
  • 1/4 cup toasted walnuts, chopped
  • fresh basil ..(optional)

Directions
  1. Cook pasta following package directions, about 10 minutes. Drain, reserving 1 cup of the cooking liquid.
  2. While pasta is cooking, season scallops with salt and pepper. Heat olive oil in a large nonstick skillet over medium-high heat.Saute 3 to 4 minutes per side, until scallops are cooked through and no longer translucent.
  3. Add the pesto to drained pasta. Stir in some of the reserve cooking liquid until pasta is evenly coated with pesto.
  4. Stir in the cheese and toasted walnuts.
  5. Serve with the Scallops.
  6. Garnish with fresh basil, if desired.

I love toasted walnuts with pesto. Sometimes when I make my own pesto, I puree chopped walnuts right into it. It's very good.
