  • COOKIE BASE:
  • 1 pouch (1 lb. 1.5-oz.) Betty Crocker double chocolate chunk cookie mix
  • 1/4 cup vegetable oil
  • 2 Tbsp. cold strong brewed coffee
  • 1 egg
  • FILLING:
  • 1 pkg. (8-oz.) cream cheese, softened
  • 1/4 cup sugar
  • 1 container (8-oz.) frozen whipped topping, thawed
  • 1 bag (9- oz.) miniature chocolate-covered peanut butter cup candies, chopped
  • TOPPING:
  • 1/4 cup creamy peanut butter
  • 1/4 cup milk
  • 2 Tbsp. sugar
  • 3 oz. bittersweet baking chocolate, melted
  • 1 cup dry-roasted peanuts

Directions
  1. Preheat the oven to 350*F.
  2. In a large bowl stir cookie base ingredients until soft dough forms.
  3. Spread dough in bottom of an ungreased 13x9" pan.
  4. Bake 12-15 minutes or until just set.
  5. Cool completely about 30 minuted.
  6. In a large bowl, beat cream cheese and 1/4 cup sugar with an electric mixer on medium speed until smooth.
  7. Fold in whipped topping and candies.
  8. Spread over cooled cookie base.
  9. In a small bowl microwaveable bowl, beat peanut butter, milk and 2 Tbsp. sugar with a wire whisk until smooth.
  10. Microwave uncovered on HIGH 30 to 60 seconds, to thin for drizzling.
  11. Drizzle mixture over filling.
  12. Drizzle with melted chocolate.
  13. Sprinkle with peanuts.
  14. Refrigerate about 2 hours or until set.
  15. For bars cut into 6 rows by 4 rows.
  16. Store covered in refrigerator.

This sounds tasty to me, except for I don't like coffee, is there anything that you might suggest as a replacement for that?


My family will go into shock when they taste these. I'm hyperventilating just looking at them(you would have to have a picture to tempt me more :0} ) Printing it off now. Nnikki, with the small amount of coffee in there I'm not sure you would even taste it. Often coffee is added in small amounts to enhance the flavor of the chocolate. If you don't own a coffeemaker, I'm sure some instant coffee dissolved in boiling water would be almost as good. I keep a small jar of instant coffee in my fridge freezer for just such occasions when I don't want to brew coffee just for 2 Tbsps. Hope that helps.
