Here is the "secret" recipe for Neiman Marcus's Chicken Salad. Simple and elegant with no onions! Serve on Bibb Lettuce or Fresh bread.

Ingredients
- 2 1/2 cups cubed cooked chicken
- 1 cup chopped celery
- 1 cup sliced or halved purple grapes (seedless)
- 1 dash white vinegar
- 1/2 cup sliced toasted almonds
- 1 Tbsp. parsley flakes
- 1 cup mayonnaise
- 1 tsp. salt
- 1/2 cup whipped heavy cream (set aside)
Directions
- Fold first eight ingredients gently together, then fold in whipped cream.
- Chill and serve over Boston Bibb Lettuce or atop a croissant.
- Cook time is chilling time.......
- Enjoy

The whipping cream is the key. My mom always used the grapes...except she got her recipe from Maas Brothers, not Neimann Marcus. Love this stuff, what a memory maker.
