Pepperoni Zucchini Boats Recipe
This is a easy dish to make either as a side dish or it can be served as a main course.

Ingredients
  • 2 Tablespoons butter
  • 2 medium zucchini
  • 1/3 cup diced onion
  • 1 teaspoon Italian Seasoning
  • 12 slices pepperoni sausage, diced
  • 1 cup Italian Cheese Blend, divided
  • 1/2 cup grated Asiago or Parmesan cheese

Directions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter is skilet.
  3. Cut zucchini in half lengthwise. With a metal spoon, scoop out most of the insides and place into a skillet. Transfer the zucchini shells to a baking sheet.
  4. Place the skillet over medium heat, and stir in onion, italian seasoning and pepperoni. Cook about 3 minutes. Remove from heat, and spoon cooked mixture into zucchini shells. Top with Italian cheese blend then sprinkle with grated cheese.
  5. Bake in preheated oven for 12 minutes.

Love zucchini boats - usually stuff mine with hot sausage and cream cheese, but I'm loving this idea with pepperone!! We will have zucchini falling out of the markets soon, so this will be a must try - loving your recipes, LT!
