How to make it

  • In a mixing bowl, cream the shortening, peanut butter and sugars.
  • Add vanilla.
  • Add eggs, one at a time, beating well after each addition.
  • In another bowl, combine flour, baking soda and salt; add to creamed mixture.
  • Shape into 1-in. balls and place 2-in. apart on ungreased cookie sheets.
  • Flatten to 3/8-in. thickness with a fork.
  • Bake at 375 degrees for 7-8 minutes or until golden.
  • Cool on wire racks.
  • In a mixing bowl, beat filling ingredients until smooth.
  • Spread on half of the cookies and top each with another cookie.
