Peanut Butter Sandwich Cookies Recipe
This gives Peanut Butter Cookies a new twist. Kids just love them.

Ingredients
  • 1 cup butter-flavored shortening
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 3 eggs
  • 3 cups all-purpose flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • FILLING:
  • 1/2 cup creamy peanut butter
  • 3 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 5-6 Tbsp. milk

Directions
  1. In a mixing bowl, cream the shortening, peanut butter and sugars.
  2. Add vanilla.
  3. Add eggs, one at a time, beating well after each addition.
  4. In another bowl, combine flour, baking soda and salt; add to creamed mixture.
  5. Shape into 1-in. balls and place 2-in. apart on ungreased cookie sheets.
  6. Flatten to 3/8-in. thickness with a fork.
  7. Bake at 375 degrees for 7-8 minutes or until golden.
  8. Cool on wire racks.
  9. In a mixing bowl, beat filling ingredients until smooth.
  10. Spread on half of the cookies and top each with another cookie.
