Tuna - Pepper Pasta Salad Recipe
Adapted from Eating Well magazine, this is a great summer lunch out on the patio!

Ingredients
  • 2 tablespoons nonfat plain yogurt
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons water
  • 1 1/2 teaspoons lemon juice
  • 1 garlic clove, minced
  • Freshly ground pepper (to taste)
  • 2/3 cup roasted red peppers, chopped and divided
  • 1/2 cup finely chopped red onion
  • 4 oz chunk light tuna in water, drained
  • 4 oz broccoli florets, steamed until crisp-tender and shocked
  • 6 ounces whole-wheat penne, cooked and drained

Directions
  1. Combine yogurt, basil, water, lemon juice, garlic, salt, pepper and the remaining 1/3 cup red peppers in a blender, puree until smooth.
  2. In a large bowl, toss together remaining peppers, onion, tuna, broccoli and pasta.
  3. Add the pepper sauce and toss well to blend. Chill before serving.
