Crustless Quiche

Quiche without the crust, for those trying to watch their carbs or those who just don't like crust
Ingredients
- 1/2 pound bacon crisp fried and crumbled shopping list
- 1/2 cup chopped onion shopping list
- 1 small bell pepper chopped shopping list
- 2 garlic cloves chopped shopping list
- 3 portabello mushrooms chopped shopping list
- 1 cup cooked broccoli florets, or 1 cup frozen spinach drained shopping list
- 1 cup shredded cheddar shopping list
- 5 eggs shopping list
- 1 cup milk shopping list
- 1/2 cup cream shopping list
- 1/2 tsp cinnamon shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 400F
- butter pie tin
- sautee bacon, reserving fat, drain well on paper towel
- sautee onion, pepper, garlic, mushrooms in bacon fat drain very well
- beat eggs, add milk, cream, cinnamon, salt and pepper
- add remaining ingredients
- pour into pie tin and bake for 40 - 50 minutes until knife inserted in centre comes out clean and eggs are set. Let rest 10 minutes before slicing
