Ingredients

6 - EGGS BEATEN

4- 5 BELL PEPPERS …….( I USE RED AND GREEN )

SALT AND PEPPER TO TASTE, (AND ANY OTHER SEASONING YOU WANT TO ADD )

3/4 - TO 1 POUND PEPPER-JACK CHEESE..GRATED

Directions

CLEAN PEPPERS AND QUARTER , PAR -BOIL FOR 5 MINUTES.

LAYER THE PEPPERS AND GRATED CHEESE IN A BUTTERED 2 QUART- CASSEROLE DISH WHEN READY TO SERVE; BEAT EGGS AND SEASON AS FOR SCRAMBLING , POUR OVER PEPPERS AND CHEESE.

BAKE FOR 25 MINUTES AT 350 DEGREES F..

SERVE WITH SALSA AND SOUR CREAM……
