Blue Whiskey Clams Recipe
Little neck clams steamed in white wine, butter and garlic, broiled on the half shell in its own juices with blue whiskey cheese, grated Parmesan and cubed artisan bread.

Ingredients
  • Little neck clams
  • Whiskey Blue Cheese or Winey Blue Cheese (any blue cheese will do)
  • Garlic
  • Grated Parmesan
  • White wine
  • Red pepper flakes
  • Grated pepper
  • Artisan bread (French, Italian Boule);need only 1 quarter loaf

Directions
  1. Heat white wine and butter in large stock pot
  2. Add freshly minced garlic and pepper
  3. Add little neck clams
  4. Steam for 5 minutes until opened
  5. Discard any clams that do not open
  6. Place clam in half shell on baking sheet
  7. Spoon in juice from stock pot
  8. Cube the bread about the size of a penny and place one in each clam shell
  9. Place a piece of dime-sized blue cheese in each clam shell
  10. Sprinkle with parmsean
  11. Broil for 10 minutes until bubbling good and browned on top

These sound sinfully good!


It sometimes happens when I am in the supermarket and certain ingredients jump out at me and the blue cheese with the clams in this recipe really gives it a pop of flavor. The bread soaks up the juice and is nicely toasted.
